Red Lentil Soup

Directions

Combine lentils, chopped potatoes, chopped onions, and veggie broth in large saucepan and bring to a boil. Reduce heat, add paprika, salt and pepper, and cook for 45 minutes or until potatoes are soft enough to mash.

Mash potatoes or blend soup in a blender for a smoother soup. Squeeze lemon juice on each bowl and serve with bread.
